Ingredients

  • Simpsons Medium Crystal 1/4 lbs
  • Dingemans Caramel Pils 1
  • Briess Wheat Extract 5 lbs.
  • Wyeast 3068 Weihenstephan Weizen
  • 1 oz. Perle hops (7.2% alpha acid) for 60 min.
  • 1 oz. German Tradition hops (6.2% alpha acid) for 20 min. (We had a crises and ended up using .75 oz)

Boil Schedule

  • 60 Minutes - Add Perle
  • 20 Minutes - Add Tradition

Process

  • Steeped grains for 20 @ 150
  • Added extract started boil
  • Added Perle, we used 1 oz of leaf hops @60
  • Added .75 oz of tradition @ 20
  • Cooled, stuck in fermenter @ 62. Fermenting within 6 hours.

Notes

  • I've had really good luck with esters with this yeast when its brewed on the colder side(60 ish).
