Ingredients
- Simpsons Medium Crystal 1/4 lbs
- Dingemans Caramel Pils 1
- Briess Wheat Extract 5 lbs.
- Wyeast 3068 Weihenstephan Weizen
- 1 oz. Perle hops (7.2% alpha acid) for 60 min.
- 1 oz. German Tradition hops (6.2% alpha acid) for 20 min. (We had a crises and ended up using .75 oz)
Boil Schedule
- 60 Minutes - Add Perle
- 20 Minutes - Add Tradition
Process
- Steeped grains for 20 @ 150
- Added extract started boil
- Added Perle, we used 1 oz of leaf hops @60
- Added .75 oz of tradition @ 20
- Cooled, stuck in fermenter @ 62. Fermenting within 6 hours.

Notes
- I've had really good luck with esters with this yeast when its brewed on the colder side(60 ish).
