imperial rye porter with rye whiskey - 10 gallon - all grain

recipe was based off off the baltic porter from northern brewer and mixed in some advice from a forum post on using rye.

Ingredientsyes

  • 6 lb munich malt
  • 6 lb pilsner malt
  • 6 lb vienna malt
  • 1 lb chocolate malt
  • 10 lbs rye malt
  • 2 lb black patent malt
  • 3 oz perle
  • 1 oz mt hood - substitutions are fine

Boil Schedule

  • 60 min - add perle
  • 15 min - add 1/2 oz mt hood
  • 5 min - add rest of hood

Mash Schedule (Remove this if you did extract, keep it if you steeped grains.)

  • 154 60 min
  • 170 10 min

Process

  1. Filled a pot with 3 1/2 gallons of water.
  2. When the water reached about 100 degrees we added the Wheat Extract.
  3. Once wort started to boil we added Saaz Hops.
  4. 50 minutes after Hops were added we added Coriander Seeds.
  5. 60 minutes after adding hops I removed from heat and added Bitter Orange Peel.
  6. Cooled with wort chiller.
  7. Measured roughly 1 3/4 gallons of wort into two carboys.
  8. Filled each carboy up with 3 1/4 gallons of water.
  9. Pitched yeast
